La Clandestine balsamic vinegar factory
Introduction
The second life of Hervé Bollot. After a career as a maître d'hôtel and then as a sommelier, Hervé decided to embark on a beautiful personal project: to set up his own artisanal vinegar factory and create La Clandestine.
The adventure unfolds peacefully, somewhat secretly, in the depths of the Vercors.
In an old Dauphinoise farm, "La Clandestine" is an artisanal vinegar factory which still elaborates traditionally and naturally organic fruit vinegars (walnut, raspberry, blueberry, honey) as well as balsamic vinegars without added flavouring or colouring.
